I made another batch of no-oil veggie filled Egg Rolls based on the china express recipe. Oh my goodness, it is a now forever product that will be made on a weekly basis or twice a week. This time the key was to get them even more golden brown and I cooked them up to 405 degrees. They are so good, just pick your dipping sauce. Soy sauce with spicy mustard mixed together is really tasty with egg rolls. A good fire hot sauce is a winner when mixed in with fat free blue cheese dressing. It is an egg roll palace down at the Southernmost Point!
Even the restaurant industry on the islands has down sizing in the summer. I am getting more hints that I am going to be let go. The shock of the situation has worn off so now I'm better able to just smile and do my work. During the summer the wait staff gets cut. I don't know if I'm going to be able to get a new job before I get let go but I will find something. I can do temp work until I find something. I have money set aside for a layoff and I don't have many bills either. I am going to have to work on this every weekend now until I get something. I cannot slack off.
